Dunbar Kitchen & Tap House

Located int he heart of Five-Points, Dunbar Kitchen & Tap House is a neighborhood restaurant and pub serving hand crafted dishes and an outstanding whiskey list. 

EVG has been pivotal in the restaurant’s ownership change and ongoing processes. We have been involved in administrative, managerial, staffing and operating  systems. EVG’s work has led to higher profitability and restaurant efficiency. 

Hyatt House KC

The Kansas City Hyatt House Project is a 155 room Hyatt House hotel in the Kansas City Central Business District. The hotel will feature a rooftop amenity deck that will have 2,500 sf of meeting/wedding space, a restaurant and craft cocktail bar – all with sweeping views of the city and Missouri river.

In addition, the ground floor will include a licensed Roasterie coffee shop and will feature a special “garment district” blend.

Construction will commence in Q3 2019 and will be complete 14-16 months thereafter.

EVG’s responsibilities include kitchen and bar design for the 1st and 13th floors.

Raglin Market

Raglin Market is a chef-driven, quick service eatery featuring farmer fresh ingredients. The market offers elevated sandwiches, salads and more, plus kegged wine, seasonal cocktails on tap, and a rotating local beer selection, all with a focus on locally sourced ingredients. A cornerstone of this concept is its service philosophy and professionalism, far above and beyond what one has come to expect in a quick service restaurant. Based in Boulder, Colorado, the market is set to launch a second location in Denver’s Five Points neighborhood in summer 2019.

EVG oversees the eatery’s ongoing administrative and back-end management, staffing and training, and operations systems. Deeply involved in the launch of the restaurant, EVG has created a replicable template for continued expansion of this timely concept.

The Rossonian

The Rossonian is a historic jazz club in Denver’s Five Points neighborhood, once known as the “Harlem of the West.” Built in 1912, the club once boasted acts such as Billie Holiday, Duke Ellington, Ella Fitzgerald, and Nat King Cole before eventually falling into disrepair.

2020 will see the relaunch of the space as an homage to its former glory days. The new iteration of the Rossonian will feature a jazz club, restaurant, hotel, speakeasy, and private club. EVG serves as the managing entity behind the project, including the development of all pro formas and financials for the concept’s multiple food and beverage offerings; staffing plans; and operational budgets. EVG will see the project through to fruition and beyond as it returns to its status as a mainstay in Denver’s diverse cultural landscape.

Griffin Club

Griffin Club is a one-of-a-kind tennis and social club in Los Angeles, California. The property boasts two onsite dining options, state-of-the-art fitness and spa amenities, two Olympic-size pools, group and individual tennis lessons, and more.

EVG’s role in the 2018 reinvention of the club has included the implementation of a new technology plan, an incentivized management bonus structure, and an instilled culture of high-end hospitality. EVG’s work has dramatically increased food and beverage sales, quality, and cost management, and resulted in a significant rise in member enrollment and retention. EVG is proud to have helped the Griffin Club to achieve a new level of food, service, and hospitality.

I have worked with Greg Topel, founder of EVG Hospitality, throughout the past year on two large development and renovation projects and I’m greatly looking forward to continuing to work with him for the foreseeable future.
